Carrot Bread Or Muffins

  1. Preheat oven to 350 degrees.
  2. In a medium bowl, sift flour and spices, being careful to sift the baking powder to avoid clumps.
  3. Mix wet ingredients, flax seed and grated ginger in a large bowl with a whisk. Add sugar and continue to mix.
  4. Gradually add dry ingredients until mixture is smooth. It will seem a bit dry. Mix in grated carrot (it will now have a much smoother, more moist consistency) and pour into 2 greased mini-loaf pans and bake for 30-40 minutes, or until top has risen and browned and toothpick or knife stuck in the middle of the loaf comes out clean.
