Strawberry Shortcut Cake
- 1 c. miniature marshmallows
- 2 (10 oz.) pkg. frozen sliced strawberries
- 1 small box strawberry Jell-O
- 2 1/2 c. flour
- 1 1/2 c. sugar
- 1/2 c. oil
- 3 tsp. baking powder
- 1/2 tsp. salt
- 1 c. milk
- 1 tsp. vanilla
- 3 eggs
- Generously grease bottom only of 13 x 9-inch pan.
- Sprinkle marshmallows over bottom of pan.
- Combine Jell-O (dry) with strawberries and set aside.
- In a large bowl, blend rest of ingredients until moist, then beat for 3 minutes on medium speed. Pour batter evenly over marshmallows in pan.
- Now pour strawberry mixture evenly over top.
- Bake at 350u0b0 for 45 to 50 minutes until golden and toothpick comes out clean.
- Serve warm with ice cream or whipped cream.
- As the cake bakes the strawberries sink and the marshmallows rise and glaze the top.
