Aunt Madges Blue Ribbon Carrot Cake
- 2 cups sugar
- 1 1/2 cups oil
- 4 eggs beaten well
- 2 teaspoon baking soda
- 2 cups flour
- 2 teaspoon cinnamon
- 1 teaspoon salt
- 1 cup chopped walnuts
- 3 cups grated carrots
- 3/4 cup raisin
- icing
- 1 large container whipped topping
- 1 small box vanilla instant pudding
- 1 large can crushed pineapple drained
- icing
- mix pineapple and pudding together
- then add to whipped topping chill while cake baking
- mix sugar and oil together then add eggs mix well. combine dry ingredients and add by three parts to oil mixture until smooth then add carrots raisins and walnuts bake in three greased andv floured 9 inch cake pansfor 30 minutes let cool completely then frost and refrigerate for at least 2 hours
