Stuffed Peppers
- 4 Large bell peppers
- 1/2 Lb ground beef
- 6 oz Queso Fresco
- 4 oz grated cheddar cheese
- 2 Large eggs
- 2 Hand fulls Ritz crackers
- Onion powder about 2 tsp.
- Garlic salt or crushed garlic about 2 tsp. or two cloves
- Preheat oven to 425*
- Cut tops and insides out of peppers, lightly oil the outsides and place in oven safe baking dish.
- In a medium/large skillet, brown ground beef and season with garlic, onion salt and pepper to taste.
- In a large mixing bowl combine cooked beef, crumbled queso fresco, cheddar cheese, crushed crackers, and mix. Add the eggs very last so the beef has time to cool and you don't cook the eggs during the mixing process. Mix all ingredients until well moistened and place in peppers. Cook until stuffing turnes brown and peppers are soft(about 20-30 minutes).
- Cut them in half lengthwise and serve.
