Golden Glazed Grilled Salmon Steaks
- 4 salmon steaks, 1 inch thick
- 1 Tbsp olive oil
- 1/2 tsp curry powder
- 1/2 tsp salt
- 1/2 tsp sugar
- 1/2 tsp crushed red pepper
- 1 cup slivered fresh apricots
- 1/4 cup apricot nectar
- 2 Tbsp rice vinegar
- 1 clove garlic, crushed
- 1 Tbsp apricot preserves
- 2 Tbsp slivered dried apricots
- 2 Tbsp sliced almonds
- garnish- minced green onion and cilantro sprigs
- Brush the salmon steaks with the olive oil. Combine the curry, salt, sugar and pepper. Sprinkle onto both sides of the salmon steaks. Grill on a grill rack 5-6 minutes per side over high heat or till the salmon tests done. While the salmon is grilling place the rest of the ingredients in a small saucepan on the grill rack and cook till hot and well blended. Place the salmon steaks on a platter and spoon the glaze over top. Garnish with the green onion and cilantro.
