Salmon Balsamico
- 4 Pieces of Salmon Filet
- 1/4 Cup vegetable oil
- 1/4 Cup Flour
- 1/4 Cup Aged Balsamic Vinegar
- 1 Cup of Sliced Strawberries
- 2 Tbsp Maple Syrup
- 1/4 Cup Fish stock
- 1/4 Cup Red Wine (Cabernet or Pinot Noir)
- 1 Tbsp Creme De Cassis (Black currant )
- 4 leaves of Basil
- Salt and Pepper to taste
- 1 Tbsp butter
- Preheat the oven to 350 degrees.
- Dredge the salmon filets in the flour and shake off the excess. Heat the oil in a large pan and add the salmon. Sautee for approx.3-4 minutes, the salmon will still be somewhat pink inside, but will continue to bake in the oven for 3-4 more minutes. Remove salmon from pan, place in ovenproof dish and put in oven. Meanwhile deglaze the pan with the balsamic vinegar and red wine, then add the maple syrup, stock, strawberries, creme de cassis, salt and pepper and butter to the pan, sccrape up all the goodness from the bottom of the pan, stirring for 2-3 minutes, the sauce will thicken somewhat. At the last minute add the basil leaves.
- remove the salmon from the oven, plate them and top with the sauce.
