John'S Pepper Chicken
- 3/4-1 cup Olive Oil
- 3 Cloves of garlic
- 1-1.5 pounds Chicken pieces with skin (I usually get one package of breasts or thighs)
- Oregano to taste
- Red Pepper flakes to taste
- salt to taste
- 1 Green pepper, cut in 1/2 in slices
- 1 Red pepper, cut the same
- one 12-oz jar of peppercini peppers
- brown or white rice made accoring to directions (4 to 6 servings depending on the number of people eating)
- Loaf of Italian bread
- Place the olive oil in a roasting pan, or 13x9 glass baking dish. Add the garlic, swirl to mix and place in oven. Turn oven on to 425 degrees.
- While waiting for the oil to heat up, cut up the red and green pepper and wash chicken pieces. When you can smell the garlic, it's heated up, remove the pan/dish from the oven.
- Season each chicken piece with oregano, salt, and red pepper flakes (be careful if you don't like spicy food - use flakes sparingly) and place each piece skin side down in the pan with the garlic oil.
- Place in oven for 25 minutes. (The chicken should brown on one side, if not you may want to brown it on the stovetop for a few minutes after taking it out of the oven)
- After 25 minutes, flip chicken over, add red and green pepper slices, as well as the entire jar of peppercinis, including the juice. Cook for another 25 minutes.
- This is usually when I make the rice according to the package.
- Baste chicken with sauce occasionally while cooking.
- Serve chicken and peppers over rice and dip italian bread into olive oil sause. Mmmmmm...
