Mom'S Hearty Vegetable Soup

  1. Wash celery stalks and leaves; cut stalks in pieces.
  2. Cut meat off bone and cut meat into 1 1/2-inch pieces.
  3. Place meat and meat bone in saucepan.
  4. Add water, salt, parsley, pepper and celery.
  5. Cook gently 2 hours or until meat is tender.
  6. Meanwhile, peel and dice potatoes.
  7. Scrape carrots and cut in 1/2-inch pieces and peel and thinly slice onions.
  8. Add vegetables to soup; continue to cook 1 hour longer or until vegetables are tender. Add tomatoes; cook soup 10 minutes longer.
  9. Taste to correct seasonings and serve.
