Mom'S Hearty Vegetable Soup
- 4 stalks celery
- 1 1/2 lb. beef with bone
- 8 c. water
- 4 tsp. salt
- 2 tsp. parsley
- 1/4 tsp. ground pepper
- 2 stalks celery, chopped
- 6 medium potatoes
- 8 small carrots
- 2 medium onions
- 2 (1 lb. 4 oz. each) cans tomatoes
- Wash celery stalks and leaves; cut stalks in pieces.
- Cut meat off bone and cut meat into 1 1/2-inch pieces.
- Place meat and meat bone in saucepan.
- Add water, salt, parsley, pepper and celery.
- Cook gently 2 hours or until meat is tender.
- Meanwhile, peel and dice potatoes.
- Scrape carrots and cut in 1/2-inch pieces and peel and thinly slice onions.
- Add vegetables to soup; continue to cook 1 hour longer or until vegetables are tender. Add tomatoes; cook soup 10 minutes longer.
- Taste to correct seasonings and serve.
