Green Beans, Baked Or Broiled
- 1 1/2 pounds green beans, tops trimmed
- 1 red, yellow, or orange pepper cut into strips the same thickness as the green beans
- 2 tablesppoons extra virgin olive oil
- 3 cloves of garlic, minced
- kosher salt and pepper to taste
- zest of 1 lemon
- juice of 1 lemon
- If oven roasting, preheat the oven to 400 degrees.
- Combine the green beans, peppers, olive oil, and garlic in a shallow baking dish or half sheet pan lined with foil. Season to taste with salt and pepper.
- If broiling, place the pan onto an oven rack 8 inches (second level from top) from the broiling element. Broil for five minutes, mix and broil five minutes more. Keep an eye on them as you don't want them to burn!
- If baking, place the pan on an oven rack in the middle of the oven. Roast for 10 minutes, mix once, and roast for another 10 minutes.
- Remove from the oven and mix in the lemon zest and lemon juice. Serve immediately or serve at room temperature.
