Potato, Apple And Dry Fruit Salad

  1. 1- cube potatoes into 1 inch chunks and steam till cooked but firm - rinse in cold water to stop cooking.
  2. 2- finely chop onions into the size of confetti and add to potatoes.
  3. 3- add raisins/cranberries.
  4. 4- core and dice apples into half inch pieces and immediately mix into potatoes with spices, lime juice and mayonnaise, so that apple won't oxidize and darken.
  5. 5- fridge for at least 3 hours before serving with sliced tomato and radish garnish over lettuce bed
