Potato, Apple And Dry Fruit Salad
- 4 lb - idaho or russet potatoes, not peeled
- 3 lb - macintosh apples, not peeled
- 2 large red onions (for color)
- 2 cups - raisins or dry cranberries, or mix of both
- salt to taste
- 1.5 tablespoon - hot curry mix
- 1 tablespoon - ground cumin
- half teaspoon - ground cinnamon
- juice of 2 limes
- Approximately 2 cups - mayonnaise (to taste)
- GARNISH
- ripe tomatoes
- radish
- leafy lettuce
- 1- cube potatoes into 1 inch chunks and steam till cooked but firm - rinse in cold water to stop cooking.
- 2- finely chop onions into the size of confetti and add to potatoes.
- 3- add raisins/cranberries.
- 4- core and dice apples into half inch pieces and immediately mix into potatoes with spices, lime juice and mayonnaise, so that apple won't oxidize and darken.
- 5- fridge for at least 3 hours before serving with sliced tomato and radish garnish over lettuce bed
