Baked Potato With Cheese And Three Colours Of Vegetables

  1. Place the potato or potatoes in one bowl.
  2. In the other bowl put the olive oil, spice and onion.
  3. Microwave together on highest setting for about 1 to 3 minutes, depending on the power of your microwave, until the onion is soft but still glassy.
  4. Poke some holes in the potato with a fork.
  5. To the onions add butter, mushrooms, green vegetables, tomatoes and the rest of the seasoning.
  6. Microwave the two bowls on high for a further 4 to 6 minutes (know how powerful your microwave is), stopping once or twice to stir the sauce and poke the potato.
  7. Add cheese to the veggie bowl, stir well.
  8. Evaluate the potato using fork, and cook both bowls further for as long as necessary to ensure potato is cooked through beautifully until soft and fluffy, and that the veggie/cheese topping is a juicy and aromatic sauce.
  9. On your serving plate slice the potato at diagonal angles and pour the sauce over the potato.
