Sausage And Cheese Casserole
- 2 lb. Italian sausage
- 1/2 pt. sour cream
- 1 egg
- 2 c. milk
- 1 Tbsp. flour
- 1 pkg. frozen spinach (optional)
- 1 lb. pasta noodles (elbows, ruffles, rotini, etc.)
- 3/4 c. grated Parmesan cheese
- salt and pepper to taste
- parsley to taste
- 1/4 c. butter or margarine
- 8 oz. sliced or shredded Mozzarella or Muenster cheese
- Brown sausage, crumble it and drain away fat; set aside.
- Boil noodles and drain.
- In a saucepan over medium heat, melt butter. Add flour until pasty.
- Gradually pour in milk and stir until somewhat thickened.
- Remove from heat.
- Add sour cream, salt, pepper, parsley, egg, Parmesan cheese and blend together.
- Mix with noodles.
