Cuban Style Sausage & Black Beans
- 1 tablespoon Vegetable oil
- 1 pound bulk Pork Sausage
- 1 medium Onion, chopped
- 1-2 Anaheim (or other mild) peppers, about 4 ounces, seeded and chopped
- 1 teaspoon Salt
- 1/2 teaspoon Pepper
- 1/4 teaspoon Cayenne pepper (or to taste)
- 1/2 teaspoon ground Cumin
- 1/2 teaspoon Oregano
- 1 12 ounce can, Mexi-Corn
- 1 16 ounce can, Black Beans, drained & rinsed
- 1 16 ounce can, chopped Tomatoes
- 1/2 cup Wine or Beer
- Fresh Cilantro, finely chopped
- 1-2 Limes, cut into quarters
- Saute and break up sausage, with the oil, in a large skillet. Add onion & Anaheim pepper and continue to saute, stirring and breaking up sausage until it loses its pink color and is cooked through.
- Stir in seasonings, then add corn, black beans, tomatoes and wine or beer. Simmer, stirring occasionally, for 10-15 minutes, until liquid is reduced by half.
- Remove from heat and serve with cilantro and lime slices on the side. Add a green salad and bisquits or corn bread.
