Angel Hair Pasta In Parsleyed Mushroom Sauce
- 1 large shallot minced
- 2 garlic cloves minced
- 2 tbsp olive oil
- 8 ounces white mushrooms (1 box)
- 8 ounces crimini mushrooms(or any
- other earthy tasting mushroom)
- 1/4 cup low sodium chicken broth
- 1 box angel hair pasta can be whole wheat pasta)
- 1 pkg garlic and herb light cheese spread
- 2 ounces whole milk
- 2 ounces parsley
- salt and pepper
- 1. Saute shallot and garlic in olive oil in saucepan.
- 2. Add cleaned and sliced mushrooms to saucepan.
- 3. Deglaze pan with chicken broth.
- 4. Add cheese spread and milk and stir.
- 5. Add salt and pepper.
- 6. Sprinle with chopped parsley.
- Variations:
- sometimes I don't use chicken broth instead I use low sodium soy sauce.
- sometimes I don't use cheese spread instead I just use milk and parmesan cheese.
- Sometimes I add frozen peas instead of parsley
