Roasted Halibut W/Yuzu Passionfruit Sauce
- 2 WHOLE PASSIONFRUIT
- 1/2 TSP YUZU PASTE
- 1 TBSP HONEY
- 1 TBSP OLIVE OIL
- 1 CLOVE GARLIC
- HALIBUT (ALLOW 4-6 OZ PER PERSON)
- PREHEAT THE OVEN TO 450*
- HALVE THE PASSIONFRUIT AND SCOOP OUT THE PULP. PRESS THE PULP THROUGH A STRAINER TO SEPARATE OUT THE SEEDS. DISCARD THE SEEDS. MIX THE PASSIONFRUIT JUICE WIT THE YUZU & HONEY. ADD MORE YUZU TO TASTE. ADD THE OLIVE OIL.
- PLACE THE HALIBUT IN A GLASS DISH. THINLY SLICE THE GARLIC AND LAY OVER THE HALIBUT. SPOON ABOUT HALF OF THE PASSIONFRUIT SAUCE OVER THE TOP OF THE HALIBUT AND ROAST FOR ABOUT 10-12 MINUTES. COVER WITH FOIL AND CONTINUE COOKING FOR ANOTHER 4-5 MINUTES. NOTE: ROASTING TIME WILL VARY DEPENDING ON THE THICKNESS OF YOUR FISH, YOU WILL WANT TO CHECK FREQUENTLY SO THAT YOU DON'T OVER COOK THE FISH.
- REMOVE THE FISH FROM THE OVEN AND SERVE, DRIZZLING THE REMAINING SAUCE OVER THE PLATED FISH.
