Spanakopita

  1. Saute onion and green onions in until golden 1/2 cup of the butter.
  2. Combine feta, cottage cheese, drained spinach, and farina in large bowl.
  3. Stir in onion mixture.
  4. Add eggs gradually, stir.
  5. Add salt and pepper to taste.
  6. Prepare a 12 by 18" pan by buttering sides and bottom. Place 1 or 2 sheets fillo in bottom.
  7. Pour spinach mixture over fillo.
  8. Fold approx 5 sheets on top, brushin each one with melted butter.
  9. Score, or actually pre-cut into squares beofre puting into 325 oven.
  10. Cook for approx. 45 minutes
