Spanakopita
- 1 c melted butter
- 1 onion, chopped
- 1 bunch green onions, chopped
- 1 lb feta cheese, crumbled
- 1 lb cottage cheese
- 2 packs frozen spinach
- 1/4 c farina
- 6 eggs, beaten
- salt, pepper
- 1 lb fillo dough
- Saute onion and green onions in until golden 1/2 cup of the butter.
- Combine feta, cottage cheese, drained spinach, and farina in large bowl.
- Stir in onion mixture.
- Add eggs gradually, stir.
- Add salt and pepper to taste.
- Prepare a 12 by 18" pan by buttering sides and bottom. Place 1 or 2 sheets fillo in bottom.
- Pour spinach mixture over fillo.
- Fold approx 5 sheets on top, brushin each one with melted butter.
- Score, or actually pre-cut into squares beofre puting into 325 oven.
- Cook for approx. 45 minutes
