5 Spice Chicken
- 8 skinless chicken thighs, or 4 skinless chicken breasts
- 1 teaspoon salt
- 1 medium onion, sliced thin
- 4 medium cloves of garlic, sliced
- 1 teaspoon cinnamon
- 1 teaspoon fennel seed
- 2 star anise
- 1/4 teaspoon cloves
- 1/2 teaspoon white pepper
- 1/2 teaspoon salt
- 1/2 tablespoon ginger, fresh minced or grated
- 1/2 cup orange juice
- 1/2 cup chicken broth
- 1 1/2 tablespoon molasses
- 1. Preheat oven to 350. Place sliced onions in bottom of baking dish. Sprinkle chicken with salt and pepper and place in baking dish on top of sliced onions. Set aside.
- 2. Simmer in small saucepan rest of ingredients for 10 minutes on high heat.
- 3. Strain and pour sauce over chicken. Cover and bake for 1 hour.
- 5. Remove from oven and place chicken and onions on platter. Pour sauce back into saucepan, bring to a boil on high heat and boil for about 10 minutes to reduce. This will thicken and intensify flavor. Pour over chicken.
- Optional: Serve with Sesame Snow Peas
