Smart Chili
- 2 teaspoons hot chili oil (or olive oil)
- 2/3 cup chopped onion
- 2 cloves garlic, minced
- 1 package Smart Ground original (tofu, ground beef style)
- 1 - 15 oz can tomato sauce
- 1 cup salsa (deli style, not bottled)
- 1 - 15 oz can diced, peeled tomatoes
- 1 to 2 - 15 oz cans black, kidney or pinto beans
- 1 cup sliced mushrooms
- 1/2 cup chopped bell pepper (optional)
- 1 can diced jalapenos (optional)
- dashes hot sauce (optional)
- 1. In a large saucepan, heat oil over medium heat. Add garlic and onions and saute until soft and golden, about 7 minutes.
- 2. Add smart ground, tomato sauce, diced tomatoes and salsa. Simmer over medium heat until bubbling, stirring frequently.
- 3. Add beans and mushrooms. If desired, add bell pepper, jalapenos and hot sauce.
- 4. Simmer over medium heat, stirring frequently, for 20 to 30 minutes. Simmering longer will deepen and mix flavors more thoroughly.
- 5. Serve with grated cheddar, sour cream and/or crusty bread.
