Dorothy Burrows Chocolate Pie(Microwave)
- 3/4 c. sugar
- 4 Tbsp. flour
- 2 Tbsp. cocoa
- 2 c. milk
- 3 eggs, separated
- 1 Tbsp. margarine
- 1/2 tsp. vanilla
- 9-inch pie crust
- Mix dry ingredients in a microwave proof bowl.
- Add milk slowly to mix.
- Microwave for 3 minutes.
- In the meantime, beat egg yolks. Remove milk mixture from microwave and add a little of the mixture to egg yolks.
- Stir.
- Add egg yolks to milk mixture, stir and return to microwave.
- Microwave for 3 more minutes, stirring after each minute.
- (May need to cook a little longer, depending on microwave).
- Mixture should leave a ditch when spoon is pulled from one side of bowl to the other.
- Add margarine and vanilla, pour into baked pie shell.
- Prepare meringue from egg whites.
- Put on cooled pie and brown under broiler.
