Tortellini With White Wine, Swiss Chard, Cheese Sauce, Topped With Fish

  1. Walnuts:
  2. 1 tbsp Oil+Cayenne (1 tsp)
  3. Heat on med high
  4. Add nuts (1/4 cup) & sugar 1-2 tbsp
  5. Reduce to med
  6. Fry till brown, reserve
  7. Swiss Chard:
  8. Chop swiss chard - separate stems from leaves
  9. 2 tbsp Oil + garlic (1 tsp)
  10. Heat on med high till fragrant
  11. Add Stems
  12. Saute till sweating
  13. Add chopped leaves
  14. Stir a few times
  15. Add ~1/2-1 cup white wine
  16. Cover & wilt, stirring occasionally
  17. Reserve with Juices
  18. Cheese sauce:
  19. 1 tbsp oil
  20. 2 tbsp butter
  21. Melt butter in oil (low)
  22. Add 1/3 cup flour
  23. Stir in flour into butter
  24. Add ~1 cup milk, a bit at a time (to avoid clumping)
  25. Stirring constantly until pours smoothly off of spoon without being too thin
  26. Add grated cheese a bit at a time (asiago/parmesan)
  27. Add wine whenever it gets too thick ~ 1 cup total
  28. Once all cheese is melted, add juices from swiss chard, stir in
  29. Turn to low while preparing remainder,
  30. Add the swiss chard ~ 5 minutes before ready to serve
  31. Stir occasionally
  32. Fish:
  33. With your favourite fish (used lemon pepper catfish)
  34. Add 2 tbsp Oil
  35. Heat on med-high until just before smoking
  36. Turn down to med-low
  37. Add Fish
  38. Cook ~ 6 minutes (varies according to thickness & fish, 70% cooked)
  39. Flip Fish, Note: this is a good time to add the chard to the cheese sauce
  40. On top of fish:
  41. Add Chopped basil ~ 4 leaves per piece of fish
  42. Add Diced Goat cheese ~ 1/8 inch thick slice per piece of fish
  43. Cook ~ 4 minutes
  44. Tortellini:
  45. Note: Start the boil 1/2 way through cheese sauce
  46. Bring water to Boil
  47. Add dash of salt (start at same time as fish)
  48. Boil ~ 8 minutes (white), ~ 10 minutes (whole wheat)
  49. Drain
  50. Toss with olive oil to avoid sticking
  51. Serve:
  52. Add enough tortellini to cover bottom of bowl
  53. Add Cheese sauce ~1/4 inch in bottom of bowl (half the height of a tortellini)
  54. Aim to have the swiss chard in middle of bowl
  55. Place Fish on top Swiss Chard
  56. Spread walnuts around the fish
