Turkey Veggie Soup

  1. Boil turkey carcass in a large pot full of water, 1 onion, 3 celery stalks, 2 carrots, Nature's Seasoning, thyme and basil. When most of meat has fallen off carcass separate broth and carcass. Then separate meat from bones and discard bones. Saute veggies in olive oil in pot for 5 minutes. Return stock to pot and bring to a boil. Boil for 20 minutes then turn down to a simmer. Return turkey meat to pot and simmer for at least an hour before serving with bread.
