Croque Madam

  1. melt butter in pan, add flour cook 2-3 mins after whisking, stir until smooth. slowly whisk in milk until it thickens. remove from heat and season with salt pepper and nutmeg. Stir in parmesan and 2 tsp of gruyere.
  2. Preheat oven to 350. Butter slices of bread lightly on both sides and lay them on a baking sheet. bake turning once until lightly browned.
  3. Spread mustard on one side of each slice of bread. Divide ham between them along with 1/2 c of gruyere. Place other slices mustard side down on top.
  4. Spread sauce over sandwiches and sprinkly with rest of gruyere. place on pan and bake 5 mins. Top each with a fried egg.
