Croque Madam
- 1 tbsp butter
- 1 tbsp flour
- 3/4 C milk salt and pepper
- pinch fresh ground nutmeg
- 2 tbsp parmesan cheese
- 3/4 c grated gruyere cheese
- 4 slices french bread
- 8 thin slices ham
- dijon mustard
- 2 eggs fried over easy
- melt butter in pan, add flour cook 2-3 mins after whisking, stir until smooth. slowly whisk in milk until it thickens. remove from heat and season with salt pepper and nutmeg. Stir in parmesan and 2 tsp of gruyere.
- Preheat oven to 350. Butter slices of bread lightly on both sides and lay them on a baking sheet. bake turning once until lightly browned.
- Spread mustard on one side of each slice of bread. Divide ham between them along with 1/2 c of gruyere. Place other slices mustard side down on top.
- Spread sauce over sandwiches and sprinkly with rest of gruyere. place on pan and bake 5 mins. Top each with a fried egg.
