The One Chocolate Chip Cookie
- 1 c. sugar
- 1 c. brown sugar
- 1 c. corn oil
- 2 eggs, beaten
- 1 tsp. real vanilla extract
- 1/2 tsp. real almond extract
- 2 1/2 c. flour
- 3/4 tsp. baking soda
- 1/2 tsp. salt
- 1/2 tsp. baking powder
- 1/2 c. chopped pecans
- 1/2 c. rolled oats
- 1 1/2 c. semisweet chocolate chips
- Preheat oven to 350.
- Mix together sugars, oil, eggs, and extracts with a mixer until light and fluffy.
- Sift together flour, soda, salt, and baking powder.
- Slowly stir into the sugar mixture until just well blended.
- Stir in oats, nuts, and chocolate chips until evenly distributes, being careful not to overstir.
- Drop by spoonfuls onto an ungreased cookie sheet. Bake at 350 for 8-10 minutes til golden.
- Allow to cool for one minute, transfer to wire rack and allow to cool for as long as possible before you break down and eat a dozen all by yourself.
