Peter'S Rarebit
- 2 large tomatoes, sliced
- 1/4 stick butter
- 1 Tbsp. prepared mustard
- 1/2 tsp. dry mustard
- 2 tsp. Worcestershire sauce
- 12 strips bacon
- 1 lb. sharp Cheddar cheese, cut in 1/2-inch cubes
- 4 English muffins
- sugar
- salt
- pepper
- 1/2 tsp. paprika
- 1/2 c. dark beer
- 2 drops Tabasco
- 2 egg yolks
- 1/4 c. whipping cream
- Sprinkle tomato slices with sugar, salt and pepper; broil on both sides and keep warm.
- Saute the bacon.
- Drain and keep warm. Melt the butter in a double boiler over simmering water.
- Add mustards, Worcestershire, paprika, Tabasco and blend.
- Add cheese. Allow most to melt, stirring frequently.
- Add beer and continue stirring until the cheese is completely melted.
- Beat the egg yolks with the cream and add slowly to the cheese mixture, stirring until thickened, about 3 to 5 minutes.
- Meanwhile, toast the split muffins.
- Layer the tomatoes and bacon on the muffins and spoon the thickened sauce over all.
- Serve immediately. Makes 4 servings.
