Chicken With Pesto And Spinach
- 6 boneless skinless chicken breasts
- 6 tbsp pesto sauce
- 2 large cloves garlic, peeled and minced
- 1 package spinach, blanched and drained
- 6 slices provolone or swiss cheese (or more to taste)
- 1/2 cup chicken broth
- 1. Thoroughly clean chicken, removing all visible fat. Lay out on prep area, and pound to 1/2" thick.
- 2. Place the pesto sauce and the minced garlic in a bowl, mix.
- 3. Spread the mixture over the chicken breasts, apx 1 tablespoon per pc.
- 4. Spread a generous layer of spinach over each breast.
- 5. Fold the chicken pcs in half, and secure with skewers or string.
- 6. Place the chicken in a glass baking pan that has been sprayed with cooking spray.
- 7. Place a slice of cheese over each pc of chicken. Pour the broth into the pan.
- 8. Bake at 350 degrees until done, apx 30 minutes.
