Janchi Guksu 잔치 국수 (Korean Warm Noodles Aka Feast Noodles)

  1. Anchovy Broth Ingredients:
  2. 2 cups dried myeolchi (anchovies)
  3. 1 piece dashima (kelp)
  4. 1/2 cup dried shrimp (optional)
  5. 2 tbsp soy sauce
  6. 1 tsp refined rice wine
  7. 1 yellow onion, halved
  8. 1 leek, halved (or 3 green onions)
  9. 9 cups water
  10. Toppings:
  11. 12~14 oz. guksu, (thin wheat noodles)
  12. 1/2 zucchini, peeled & julienned
  13. 1 carrot, julienned
  14. 2 eggs beaten (jidan), frying the yolks and white separately optional
  15. 1, 2 sheets toasted gim (laver)
  16. 1/2 cup kimchi, thinly sliced
  17. beef, cut into thin strips (optional)
