Panda Bear Bread
- 2/3 c. shortening
- 1 1/4 c. sugar
- 1 1/4 c. brown sugar
- 4 large eggs
- 1 c. canned applesauce
- 1 c. canned pumpkin
- 1 1/2 c. whole wheat flour
- 2 c. all-purpose flour
- 2 tsp. baking soda
- 1/2 tsp. baking powder
- 1/2 tsp. salt
- 1/2 tsp. cinnamon
- 1/4 tsp. ground mace
- 1/4 tsp. nutmeg
- 1/4 tsp. cloves
- 1/3 c. chopped dried apricots
- 1/3 c. dates
- 1 c. chopped walnuts
- Beat shortening, sugar and brown sugar.
- Add eggs, then beat in applesauce and pumpkin.
- Stir together flour, baking soda, baking powder, salt, cinnamon, mace, nutmeg and cloves.
- Add dry ingredients to pumpkin mixture, stir until flour is moist; then stir in apricots, dates and nuts. Put into 2 greased 5 x 9-inch loaf pans.
- Bake at 350u0b0 about 1 hour.
