Easy Summer Lentil Salad
- 1 c green lentils
- 1 large clove of garlic
- 1 Vidalia or red onion chopped fine
- 2 carrots cut into small dice
- 1 stalk of celery cut into small dice
- 1/2 c fresh cilantro chopped fine
- 3 tbs fresh lemon juice
- 1 tbs balsamic vinegar
- 2 tbs olive oil
- salt and pepper to taste
- 1. Crush the garlic clove and add it and the lentils to simmering salted water. Simmer 10 minutes then drain and discard the garlic
- 2. While the lentils are cooking chop the onion, carrot, celery, and cilantro.
- 3. Wisk together the lemon juice, vinegar, and olive oil in a large bowl.
- 4. Add the lentils, chopped vegetables, and cilantro. Toss to combine. Add salt and pepper if desired.
- Serve hot or cold, inside or outside!
