Easy Summer Lentil Salad

  1. 1. Crush the garlic clove and add it and the lentils to simmering salted water. Simmer 10 minutes then drain and discard the garlic
  2. 2. While the lentils are cooking chop the onion, carrot, celery, and cilantro.
  3. 3. Wisk together the lemon juice, vinegar, and olive oil in a large bowl.
  4. 4. Add the lentils, chopped vegetables, and cilantro. Toss to combine. Add salt and pepper if desired.
  5. Serve hot or cold, inside or outside!
