Mama Said No Pie (Apple And Pear)
- 3 Granny Smith Apples
- 3 Green medium sized pears
- 2 tsp vanilla
- 1 cup sugar
- 1 recipe Plain Pastry
- 2 tbsp lemon juice
- 2 tbsp flour
- 1 tbsp butter
- Wash:
- 1 egg white and 2 tbsp water
- Plain Pastry:
- 2 cups sifted flour
- 3/4 tsp salt
- 2/3 cup shortening (crisco works best) sliced in 1/2 inch pieces
- 4-6 tbsp ice cold water
- makes enough for 1 pie (single or double sheet)
- Make Plain Pastry:
- For quick dough use a food processor, but don't over work the dough - this is my favorite method.
- Place sifted flour and salt in food processor first, then add the cut up pieces of shortening. Have the cold water ready and at hand, then turn the food processor on. Tablespoon by tablespoon pour in the water until the mixture forms into one solid mass.
- Make Pie:
- Core, skin, and slice apples and pears. Put in a large bowl. Sift dry ingredients together an dmix with fruit. Line pie pan with pastry. Fill with fruit mix. Pour vanilla and lemon over it once mound is in desired shape. Cover with top crust (lattice style is nice). Brush with egg white wash and then dot with butter.
- The juices often bubble out of pie, so place a rimmed cookie sheet directly under pie pan when first placing the pie into the oven. Bake in 450u0b0 F oven for 15 minutes. Lower heat to 350u0b0 F and bake 45 minutes more. Cool for at least a couple hours, this way the juices won't spill out of the pie like soup when it's cut.
