Veggie Lasagna

  1. *in a small saucepan, cook veggies in butter and a few tsps of water
  2. *once veggies are thawed/cooked, add cream of mushroom soup with milk
  3. *stir and cook on medium heat, keeping the consitency sauce-like
  4. *cook noodles
  5. *combine ricotta cheese and add about 8 oz of mozzarella cheese, with about 4 tbsp of italian seasoning, stir well
  6. *layer lasagna in the following order:
  7. veggie sauce
  8. noodles
  9. ricotta mixture
  10. noodles
  11. veggie sauce
  12. noodles
  13. ricotta mixture
  14. ...
  15. top with veggie sauce and the remaining mozzarella cheese
