Veggie Lasagna
- 1 lb of chopped veggies
- 1 can cream of mushroom soup
- 2 tbsp butter
- 1 lb lasagna noodles
- 32 oz ricotta cheese
- 10 oz shredded mozzarella cheese
- ~1/2 cup milk
- italian seasoning
- *in a small saucepan, cook veggies in butter and a few tsps of water
- *once veggies are thawed/cooked, add cream of mushroom soup with milk
- *stir and cook on medium heat, keeping the consitency sauce-like
- *cook noodles
- *combine ricotta cheese and add about 8 oz of mozzarella cheese, with about 4 tbsp of italian seasoning, stir well
- *layer lasagna in the following order:
- veggie sauce
- noodles
- ricotta mixture
- noodles
- veggie sauce
- noodles
- ricotta mixture
- ...
- top with veggie sauce and the remaining mozzarella cheese
