Beef Gumbo Soup
- 4 lb. beef shank
- 2 Tbsp. oil
- 2 Tbsp. salt
- 2 onions, sliced
- 6 carrots, sliced
- 2 potatoes, diced
- 1/2 c. celery, chopped
- 1 Tbsp. garlic powder
- 1 (16 oz.) can tomatoes
- 1 pkg. frozen lima beans
- 1 (16 oz.) can green beans
- 1 (16 oz.) can kernel corn
- 1/4 head cabbage, sliced
- 1 (16 oz.) can okra, drained
- 2 qt. water
- Cut beef in small pieces and brown in oil.
- Add salt and 2 quarts water and onion.
- Simmer for 2 1/2 hours.
- Add carrots, potatoes, celery and garlic powder.
- Cook 30 minutes longer.
- Add tomatoes, beans, lima beans, corn and cabbage.
- Simmer until vegetables are tender.
- Add okra and heat.
