Pear And Feta Salad With Candied Pecans
- Salad:
- 1 bag Italian lettuce, or 1 bag baby spinach
- 1 bag mixed spring lettuce
- 3-4 pears, diced
- 1 c crumbled feta cheese
- 1 1/2 c Craisins
- 1 c pecans, coarsely chopped
- 1/4 c sugar
- Dressing: (enough for 2 salads)
- 1/2 c red onion, chopped
- 1 c sugar
- 2 tsp dijon mustard
- 1 tsp salt
- 2/3 c white wine vinegar
- 2 c vegetable oil
- 3 tbs poppy seed
- Dressing:
- Blend first 5 ingredients in blender. Add oil and blend again. Stir in poppy seeds.
- Salad:
- Put chopped pecans in saucepan with sugar. Heat on low heat until sugar is melted, but not until it disappears. Remove from heat and set aside to cool.
- Toss other ingredients in bowl and top with cooled pecans.
- Use 1/2 of prepared dressing and toss again.
