Shrimp Medalions
- For each plated serving
- 8 large shrimp
- BBQ Rub, any type adapted from a cookbook is acceptable.
- 1 piece of bacon
- Tooth picks
- BBQ Sauce
- Shell and devien the shrimp
- Butterfly the shrimp so they lay flat and even on a cutting board.
- Lay one shrimp down, and then take the next shrimp and lay it over the first shrimp, Tail ends pointing in the same direction, covering just 50% of the first shrimp.
- Continue the chain with the remainder of the shrimp. Each shrimp should be half way exposed.
- Sprinkle the BBQ Rub over the line of shrimp.
- Starting with the last shrimp put down(it should be fully exposed), turn the line of shrimp on it's side and begin to roll the shrimp into a disk.
- Wrap the bacon piece around the outside of the disk and secure the medalion with toothpicks.
- Grill over a hot fire for 4 minutes per side.
- Remove from the grill, discard the bacon and toothpicks.
- Serve with sauce on the side
