Spiced Wild Duck
- 2 ducks
- salt
- pepper
- ground ginger
- 1 Tbsp. butter or lard
- 2 large onions, chopped fine
- 3 pt. water
- 2 Tbsp. vinegar
- 8 cloves
- 8 black peppercorns
- 2 bay leaves
- 1/2 stalk celery, chopped
- 1/2 tsp. thyme
- 1 tomato, chopped fine
- 1 carrot, chopped fine
- 1 apple, peeled, halved and studded with 6 cloves per half
- Rub each duck well inside and out with salt, pepper and ground ginger.
- Place one-half apple in each duck; place ducks in a large baking pan.
- In a skillet, saute onions in butter until lightly browned; add water and vinegar and heat to boiling.
- Add remaining ingredients and remove from heat; pour mixture over ducks.
- Start cooking at 450u0b0 for 20 minutes.
- Reduce heat to 350u0b0 and bake for approximately 2 hours, basting frequently.
