Spiced Wild Duck

  1. Rub each duck well inside and out with salt, pepper and ground ginger.
  2. Place one-half apple in each duck; place ducks in a large baking pan.
  3. In a skillet, saute onions in butter until lightly browned; add water and vinegar and heat to boiling.
  4. Add remaining ingredients and remove from heat; pour mixture over ducks.
  5. Start cooking at 450u0b0 for 20 minutes.
  6. Reduce heat to 350u0b0 and bake for approximately 2 hours, basting frequently.
