Chinese Chicken Salad
- 3 T. rice vinegar
- 1 T. sugar
- 3 T. soy sauce
- 1/2 t. dry mustard
- 2 T. sesame oil
- 1 T.toasted sesame seeds
- 1/4 - 1/2 cup peanut oil ( or any oil)
- mix all ingredients except oils first, then emulsify the oils in ( blend)
- For salad:
- Chopped iceberg
- lots of chopped cilantro
- sliced green onions
- chopped celery
- shredded carrots
- shredded napa cabbage
- bean sprouts
- chopped peanuts
- cold chicken breasts shredded
- any/all or combo of above. Enjoy!!
- make salad dressing day before. I also add grated ginger and a bit of lime juice to dressing. Can do the chopping early in am. Then toss before serving .
