Banana Cake
- 2 c. flour
- 1 1/2 c. sugar
- 1 1/2 tsp. baking powder
- 3/4 tsp. baking soda
- 1 c. mashed ripe banana
- 1/2 c. buttermilk or sour milk
- 1/2 c. shortening or margarine
- 2 eggs
- 1 tsp. vanilla
- 1/2 tsp. salt (optional)
- In a bowl combine flour, sugar, baking powder, baking soda and salt.
- Add banana, buttermilk, shortening, eggs and vanilla.
- Beat with an electric mixer on low speed until combined.
- Beat on medium speed for 3 minutes.
- Pour batter into 2 greased and floured 8 x 1 1/2-inch or 9 x 1 1/2-inch round or 1 (9 x 13-inch) oblong pan. Bake in a 350u0b0 oven for 30 to 35 minutes or until a toothpick comes out clean.
- Cool on racks for 10 minutes.
- Remove round cakes; cool on racks.
- Serves 12.
