Crab & Greeen Chili Tamale Pie

  1. Preheat oven to 400 degrees. In a large bowl, mix first 5 ingredients adding salt & pepper to taste. Set aside. Drain the canned chilis and split them open into colander. Set aside. Prepare the instant polenta according to the package directions. Using a 10 inch pie plate or cheesecake pan, spray the bottom with shortening. Pour half of the polenta into the bottom of the pan. Lay half of the drained green chilis, covering the polenta, now spread the crab mixture over the green chilis. Lay another layer of green chilis over the crab, and pour the rest of the polenta over the chilis. Bake in preheated oven for 40 minutes or until golden brown. Top with a dollop of your own homemade salsa and enjoy!
