Cheesy Cajun Pasta
- 3 teaspoons Garlic (minced)
- 1 tablespoon Olive Oil
- 1/2 cup Red Pepper (diced)
- 1/2 cup Yellow Pepper (diced)
- 1/2 cup Orange Pepper (diced)
- 1 cup Onion (diced)
- 2 teaspoons Cajun Seasoning
- 1 teaspoon Pepper
- 8 ounces Linguine
- 1 cup Milk
- 1 1/2 cups Vegetable Broth
- 1/2 cup Parmesan Cheese (grated)
- 2 stalks Green Onions
- 1/2 pound OPTIONAL (Ground Pork , Sausage, or Chicken)
- 1. In a large pot heat oil over med-high heat. Add garlic and stir for 30 seconds.
- 2. Add peppers and onion and stir.
- 3. Add cajun seasoning and pepper. Stir and saute for 2 - 3 minutes.
- 4. Add milk, broth and linguine. Bring to a boil, turn heat down to simmer. Cover.
- 5. Stir every few minutes, allow to cook for 12 - 14 minutes or until pasta is tender and not much liquid is left.
- 6. Remove from heat and stir in cheese. Garnish with green onions.
