Chunky Chocolate Oat Muffins
- 1 cup rolled oats (oatmeal)
- 1 cup buttermilk or sour milk
- 1 cup flour
- 1 teaspoon baking powder
- 1/2 teaspoon soda
- 1/2 teaspoon salt
- 3/4 cup lightly packed brown sugar
- 1 egg, slightly beaten
- 1/4 cup vegetable oil
- 3/4 cup chocolate chips
- Combine the oatmeal and buttermilk and let stand for 5 minutes. Combine the dry ingredients in seperate bowl.
- Add the egg and vegetable oil to the oatmeal mixture. Mix well. Add the oatmeal mixture to the dry ingredients all at once and stir just until everything is moistened. Fold in the chocolate chips.. Fill greased muffin tins 3/4 full. Bake at 400 for 15-22 minutes. Melt a few chocolate chips and drizzle on top of muffins.
