Chicken Chow Mein
- 1 Tbsp. vegetable oil
- 3 c. diagonally sliced celery
- 1/2 c. sliced green onions
- 2 1/2 c. hot chicken broth
- 3 Tbsp. cornstarch
- 1/2 tsp. salt
- 1/8 tsp. garlic powder
- 1/2 tsp. ground ginger
- 1/2 c. cold water
- 1 Tbsp. soy sauce
- 3 1/4 c. chopped, cooked chicken
- 1 1/4 c. chopped green pepper
- 2 (6 oz.) cans mushrooms, drained
- 1 (8 oz.) can water chestnuts, drained and sliced
- 1 (3 1/2 oz.) can chow mein noodles
- Heat vegetable oil in a deep, heavy cooking pot.
- Add celery and onion; stir-fry over moderate heat until onion is transparent, but not brown.
- Add chicken broth; cover and cook over low heat 4 to 5 minutes.
