Chicken Chow Mein

  1. Heat vegetable oil in a deep, heavy cooking pot.
  2. Add celery and onion; stir-fry over moderate heat until onion is transparent, but not brown.
  3. Add chicken broth; cover and cook over low heat 4 to 5 minutes.
