Red Hot Grilled Salmon Salad

  1. Season salmon with lemon juice, salt and pepper. Drizzle olive oil over salmon. Grill just until it flakes, about 4 minutes on each side. Combine lettuce, peppers, tomatoes, grapes & zucchini in large salad bowl. Lightly toss with 1/4 teaspoon of Kosher salt, fresh ground pepper and 1/4 teaspoon of sugar. Using short strokes with a vegetable peeler, slice down the carrot over the salad. Lay the salmon on top and drizzle dressing over all. For dressing: combine hot sauce, lemon juice and oils in lidded container. Shake vigorously.
