Tabbouleh
- 4 chicken breasts, diced
- 1/2 tsp cinnamon
- 1/2 tsp cloves
- 5 garlic cloves, minced
- 1/2 tsp cardamom
- 1/4 tsp orange peel
- 1/4 tsp allspice
- 1/4 c tomato sauce
- 1 can diced tomatoes
- 1 large onion
- 1 and 1/2 c chicken broth
- 2 tbsp fresh chopped parsley - garnish
- 1/2 c dried currants or golden raisins - garnish
- 1 tbsp olive oil
- 1 c bulgur wheat
- Heat olive oil in large frying pan, add chicken and onion and sautee until onions are tender and chicken is browned. Stir in tomato sauce, simmer 1 minute. Add tomatoes and spices, simmer 1 minute. Add broth, bring to a boil and then reduce heat and simmer for 30 minutes (covered). Add bulgur and simmer 25-30 min until liquid is absorbed.
- Add currants and parsley before serving.
