Tabbouleh

  1. Heat olive oil in large frying pan, add chicken and onion and sautee until onions are tender and chicken is browned. Stir in tomato sauce, simmer 1 minute. Add tomatoes and spices, simmer 1 minute. Add broth, bring to a boil and then reduce heat and simmer for 30 minutes (covered). Add bulgur and simmer 25-30 min until liquid is absorbed.
  2. Add currants and parsley before serving.
