Indian Shakshuska

  1. Method:
  2. 1. Heat virgin oil in a in a large pan over medium-high heat.
  3. 2. Add red peppers and onions and garlic cook, until the contents are soft and golden brown, for about 6 minutes.
  4. 3. Add crushed tomatoes and their liquid to the skillet along with 1/4 cup water, reduce heat to medium, and simmer, stirring, until thickened slightly, about 15 minutes.
  5. 4. Add, cumin, and paprika, 1/4th teaspoon of garam masala and cook, stirring until garlic is soft, for around 2 minutes
  6. 5. Season sauce with salt and any remaining spices, such as the turmeric paprika
  7. 6. Add Panneer
  8. 7. Crack eggs and add to sauce.
  9. 8. Wait until eggs are half fried and the yolk is soft. Finally add the sauce to the fettuccine pasta.
