Indian Shakshuska
- Ingredients (for two people):
- 1/4 cup olive oil
- 1 red chili pepper, stemmed, seeded, and finely chopped (optional)
- 1green and red bell pepper
- 1 small onion, chopped
- 3 cloves of garlic, crushed then sliced minced
- 1/2 teaspoon ground cumin
- 1/2 tablespoon paprika
- 2 tomatoes chopped and drained
- Kosher salt, to taste
- 1/2 cup feta cheese, crumbled
- 1 tablespoon chopped flat-leaf parsley
- Panneer/Cottage Cheese (250 grams diced)
- Fettuccine Pasta (one packet)
- 1/4 teaspoon of garam masala or Zaatar and ( here I would have used Baharat and Zaatar , types of Israeli hot sauce, but due to my partners absence I was not able to acquire these particular Israeli spices so I instead had to substitute them for Indian ones, for example: Garam masala)
- Method:
- 1. Heat virgin oil in a in a large pan over medium-high heat.
- 2. Add red peppers and onions and garlic cook, until the contents are soft and golden brown, for about 6 minutes.
- 3. Add crushed tomatoes and their liquid to the skillet along with 1/4 cup water, reduce heat to medium, and simmer, stirring, until thickened slightly, about 15 minutes.
- 4. Add, cumin, and paprika, 1/4th teaspoon of garam masala and cook, stirring until garlic is soft, for around 2 minutes
- 5. Season sauce with salt and any remaining spices, such as the turmeric paprika
- 6. Add Panneer
- 7. Crack eggs and add to sauce.
- 8. Wait until eggs are half fried and the yolk is soft. Finally add the sauce to the fettuccine pasta.
