Sausage & Spinach Roll-Up

  1. Preheat oven to 400u0b0F.
  2. Thaw the pastry sheet and the spinach. Squeeze as much water out of the spinach as you can. This is important.
  3. Place the pastry sheet on a length of cling wrap sufficient to fold back over.
  4. Roll out pastry sheet to insure the seams don't separate.
  5. Spread a layer of the sausage over the pastry and fold the cling wrap back over the top. Use your rolling pin to even out and compress the sausage onto the pastry.
  6. Pull the cling wrap back and add a layer of spinach. Repeat the rolling with the cling wrap.
  7. Repeat with a layer of the cheese mix over the pastry.
  8. Preheat a cookie sheet in the oven.
  9. Using the cling wrap as a tool, much like a sushi rolling mat, form the pastry and toppings into a jelly roll log form.
  10. Slice the log into 3/4 inch discs and place flat on the cookie sheet at 2 inch intervals.
  11. Bake for 25 minutes, watching carefully after 15. Ovens vary.
