Zucchini Bread

  1. In a mixing bowl, combine flour, cinnamon, baking soda, salt, baking powder and nutmeg.
  2. In another mixing bowl, combine sugar, shredded zucchini, cooking oil, egg and lemon peel; mix well.
  3. Add flour mixture; stir just until combined.
  4. Stir in walnuts.
  5. Pour batter into a greased 8 x 4 x 2-inch loaf pan.
  6. Bake in a 350u0b0 oven for 55 to 60 minutes or until a toothpick inserted near the center comes out clean.
  7. Cool for 10 minutes on a wire rack.
