Indian Salmon Packets
- 4 cups broccoli florets, cut into small pieces
- 1 Tbl finely grated fresh ginger
- 2 minced cloves garlic
- 1 tsp garam masala
- 1/2 tsp cumin
- 1/4 tsp turmeric
- 1/4 tsp cayenne
- 1/8 tsp salt
- 1/8 tsp fresh pepper
- 1/2 tsp lemon zest
- 3 Tbl fresh lemon or lime juice
- 4 salmon fillets, skin removed
- 2-3 sliced scallions
- 1/3 cup raisins or dried mango(optional)
- 2 Tbl ex-virgin olive oil
- Preheat oven to 500
- 1. Parboil broccoli in boiling water for 3 minutes. Shock in ice water. Drain well.
- 2. In a small bowl stir together next 10 ingredients to form loose paste.
- 3. Spread paste all over fish.
- 4. Lay out four 12 inch pieces of aluminum foil. Place 1 cup of broccoli in center of each piece. Form a bed. Top with seasoned fillet. Sprinkle with some scallions and raisins. Drizzle each with a 1/2 T of olive oil.
- 5. Match up foil ends and roll to form tight packets. Place on baking sheet.
- Bake until fish is cooked through, 15 -20 minutes, depending on thickness.
- Place on plates. Slice open packets. Serve immediately.
