Indian Salmon Packets

  1. Preheat oven to 500
  2. 1. Parboil broccoli in boiling water for 3 minutes. Shock in ice water. Drain well.
  3. 2. In a small bowl stir together next 10 ingredients to form loose paste.
  4. 3. Spread paste all over fish.
  5. 4. Lay out four 12 inch pieces of aluminum foil. Place 1 cup of broccoli in center of each piece. Form a bed. Top with seasoned fillet. Sprinkle with some scallions and raisins. Drizzle each with a 1/2 T of olive oil.
  6. 5. Match up foil ends and roll to form tight packets. Place on baking sheet.
  7. Bake until fish is cooked through, 15 -20 minutes, depending on thickness.
  8. Place on plates. Slice open packets. Serve immediately.
