Gazpacho

  1. In a saucepan, bring water to a boil.
  2. Stir in the soup mix until dissolved.
  3. Cool slightly.
  4. In a blender, add 1/2 of soup mixture and half of the other ingredients.
  5. Top off with tomato juice; blend for a few seconds to assure the vegetables are chopped finely, but not pureed.
  6. Pour mixture in a plastic container.
  7. Prepare the remaining ingredients the same way.
  8. Top with a tablespoon of sour cream and Croutons.
  9. Makes 1 gallon.
