Chard Soup With Cilantro
- 12 oz. swiss chard
- 2 tbsp. butter
- 1 medium onion, chopped
- 3 red potatoes, thinly sliced
- 1 small bunch cilantro, chopped
- 1 tsp. paprika
- 1/3 cup sour cream
- 16 oz. can cream of celery soup
- 1/2 cup cooked rice
- 1 tsp. cumin
- 4 1/2 cups water
- salt & pepper to taste
- In a soup pot, heat the butter over medium heat. Add the onion, potatoes, paprika, cumin and cook, stirring for about 8 mins. Add 1/2 cup water and scrape the bottom of the pot to release the juices. Add the swiss chard, cream of celery, cilantro and 1/2 tsp. salt. As soon as they wilt down, add 4 cups water. Bring to boil, then lower the heat and simmer, partially covered, for 15 mins. You can puree the soup at this time if you choose then return to pot to heat. Mix the sour cream in the pot till smooth. Serve in a bowl over rice.
