Coleslaw Asian Style
- Dressing
- 6 tbsp of rice vinegar or white wine vinegar.
- 6 tbsp of vegetable oil
- 5 tbsp of peanut butter
- 3 tbsp of soy sauce
- 3 tbsp of brown sugar
- 2 tbsp of chopped ginger
- 11/2 of minced garlic
- Ingredients
- 1 green cabbage thinly sliced
- 1 red cabbage thinly sliced
- 2 red peppers cut into strips
- 2 carrots, peeled and cut into strips
- 8 scallions
- 1 cup of coriander
- 1 cup of mints
- Whisk all of the dressing ingredients from vinegar to garlci in a bowl and blend well.
- Combine the remaining ingredients in a large bowl and about one hour serving add the dressing and toss to coat. Season with salt and pepper.
