Sweet Potatoe Bread
- 1 cup microwaved mashed sweet potato
- 2 eggs
- 1/3 corn oil
- 1/4 coconut sugar
- 1/2 cup agave sugar
- 1 3/4 peach palm flour
- 1 tsp baking soda
- 1/2 tsp sea salt
- 2 tsp ground canella
- 3/4 tsp grated nutmeg
- 1/2 tsp gound cardamon
- Preheat oven to 350 degrees F (175 degrees C). Grease and flour one 8.5 x 4.5 x 2.5 inch loaf pan.
- In a large bowl, mix together the mashed sweet potato, eggs, oil, water and sugars until thoroughly combined. In a separate bowl, whisk together the flour, baking soda, salt, cinnamon, nutmeg and cardamom.
- Stir the dry ingredients into the sweet potato mixture. Combine just until incorporated; do not over mix.**Optional: Stir in 1/2 cup of nay of the following: choped hazelnuts or chopped cashews or dried tropical fruit like guava berries. Pour into the prepared pan.
- Bake at 350 degrees for 60-65 minutes or until a wooden skewer inserted into the center of the loaf comes out clean
